Thai Pesto Prawn Noodles

Thai Pesto Prawn Noodles makes a delicious dinner (or lunch) that’s quick and easy to prepare with just a few ingredients. Plus, it’s low calorie and low fat.

Ingredients (serves 4)

300g dried egg noodles

Basil

Coriander (cilantro)

75g peanuts

1 Red chili, de-seeded and chopped

1 lime, zested and juiced, plus lime wedges to serve

2 tbsp sesame oil

2 tbsp olive oil

400g king prawns, halved lengthwise

 

Method

Put the noodles in a large bowl and pour in enough boiling water to cover them. Set aside and leave until the noodles soften to al dente.

While this is happening, put the basil, coriander, peanuts, chili, lime zest and juice, sesame oil and 1 tbsp of olive oil into a food processor. Add 2 tbsp of water and a pinch of salt. Whizz into a pesto.

Heat the remaining oil in a large non-stick pan. Add the prawns and stir fry for 3 to 4 minutes. Stir in the pesto.

Drain the noodles and add them to the pan. Season with black pepper and mix well until the noodles are well coated in the pesto. If it looks dry add a splash of hot water.

Spoon into bowls, squeeze over extra lime juice and garnish with a little coriander.  Serve immediately with lime wedges.
